Overview
Dr. Starkoff’s research interests lie at the intersection of nutrition, health equity, and physical activity, with a particular focus on vulnerable populations. Dr. Starkoff is deeply committed to understanding and addressing food insecurity among college students, and particularly collegiate athletes who often face unique nutritional demands and financial constraints. In addition to food insecurity, Dr. Starkoff is an advocate for plant-based nutrition, exploring its benefits for both individual health and sport performance.
Health equity is a central theme in Dr. Starkoff’s work, with a focus on identifying and mitigating disparities in health outcomes across different socioeconomic and demographic groups. This includes examining how systemic factors such as access to nutritious food, healthcare, and safe environments influence health disparities. Dr. Starkoff’s research aims to inform policies and interventions that promote equitable health opportunities for all. Overall, Dr. Starkoff’s research is driven by a passion for improving health outcomes through a multidisciplinary approach that encompasses nutrition, physical activity, and health equity.
